3 Main Benefits of Cast Iron Cookware

If you’re considering trying cast iron, or if you have some cast iron cookware that you are not currently using, here are some things to think about.

  1. Cast iron distributes heat evenly. When you cook with cast iron you eliminate most of the “hot” and “cold” spots you’ll find on thin aluminum or stainless steel pots.
  2. Cast iron stays hot. You’ll appreciate the way your cast iron retains its heat long after removing it from the heat source. Use it for serving from because your food stays hot longer!
  3. Cast iron will last far longer than other cookware. Quality cast iron cookware will outlast you! There’s a good chance your grandchildren will pass it on to their kids. Cast iron, well cared for, will last for generations.

Caring for your cast iron cookware

Whether your cast iron cookware is brand new or very old, a few simple pointers will ensure your cookware serves you well now and well into the future.

Season it!

Well seasoned cast iron is the best “no-stick” cookware you could ever wish for! And it’s really very simple. If you have new cast iron that is not preseasoned (much of it now comes seasonsed) or you have old cast iron that needs “restoration”, here are the steps to create a long-lasting, non-stick cooking surface:

  1. Start with ” clean” cookware. In this case, clean means free of any coasting that may have been applied by the manufacturer. If you have any old cast iron, ensure it is free of rust. A palm sander with a medium grit disk is an ideal tool for cleaning the surface.
  2. Use lard to season the surface. Using enough to cover the surface to about 1/8 of an inch, place the pan in the oven at 300°F and bake for a couple of hours. Then pour off the excess lard. Let the pan cool, then wipe with a paper towel. The process may be repeated a couple of times for best results. It’s best initially to use the pan for some oil or fat dishes after seasoning.
  3. After each use, let the pan cool then simply wipe it with a paper towel, or, if some food is stuck to the pan, soak it just long enough to loosen the food, then wipe the pan. Never use detergent or scouring pads as this could ruin the seasoned surface.

If your cast iron won’t be used for a long period of time, it’s a good idea to wipe it with a thin coat of a stable oil such as olive oil to help keep moisture, and therefore rust, at bay.

One word of caution: because cast iron is such a good conductor of heat, handles get extremely hot. Keep some good oven mitts handy - you’ll need them!

Chicken Bon Vivant

INGREDIENTS

4 chicken leg quarters, skinned

2 large cans chicken broth

1 small package saffron yellow rice

1 small package Velveeta cheese

1/2 pint heavy cream

1/2 tsp. garlic powder

1 tsp. ground rosemary

1 tsp. poultry seasoning, preferably Chef Paul Prudhomme’s Poultry Magic

2 tsp. dried minced onions

1/2 tsp. black pepper

1 tblsp. flour or cornstarch

In a large pot place chicken broth, garlic, rosemary, poultry seasoning, minced onions and pepper. Add chicken. Cover pot and bring to boil. Reduce heat to active simmer. Cook for 40 minutes or until tender.

Meanwhile, prepare rice according to package instructions.

Pre-heat oven to 425 degrees.

When chicken is done, remove from pot and save pot contents. Place chicken in lightly buttered baking dish and put in oven to crisp for about 15 minutes – keep an eye on it to avoid overdoing the crisping.

While chicken is baking, strain liquid in the pot, then return the liquid to the pot. Pour off all but about 3 cups of the remaining liquid.

Cut Velveeta into small pieces to aid melting. Add cheese to the pot. Add the heavy cream. Over medium heat, stir thoroughly until the mixture is smooth. Mix flour or cornstarch with a small amount of warm water to smooth, then add a little at a time to thicken the sauce, while stirring constantly. Mixture should be thick enough to pour slowly.

Place a bed of rice on each plate, place 2 leg quarters on top of the rice and smother thoroughly with the sauce.

Serves 2.

Children’s Aprons - When The Mess Has To Be Accounted For

How often do parents observe their kids delightedly experimenting with paint and clay to craft wondrous trinkets for mum and dad? Many children will create these types of things during school and then take them home. The one thing these children will have in common is the fact that many of them at the same time will be wearing a kitchen apron. Most of these types of pursuits are very messy, so a cooking apron is incredibly useful for children’s activities.

Ideally, aprons for kids go over the head and tie in the back to keep it securely in place and not likely to come loose. There are differing types, one of which goes over the head and have a back and a front to do up at the sides.

Children’s aprons come in many different designs and styles. One of the cheapest ways is to make your own. You can conjure up quite a unique project and personalize it to your own child because an apron is one of the easiest sewing tasks to undertake.

Child aprons can have the actual hand prints of your child on it; they could have your child’s name all over it or their favorite nursery rhyme or Disney character, etc. You do not need to be the artist, most craft shops sell transfers or prints that you can apply to the finished apron to give it that personal ‘touch’.

Your little darling will have those days where he or she wants to help you in the kitchen. In that situation, you’ll really want an apron! In fact the whole kitchen needs an apron!

Sometimes it is a lot of fun to imitate Mum and wear a kitchen apron to do the cooking. Seeing how most good chefs on the TV are men, this would be a great area for boys - or girls! Just be certain that your boy has something like a superhero on his apron, and your girl has something suitably girly.

Whenever your child wants to do a messy project, be sure to have an apron or smock on hand.

Cheap Recipes For Your Menu

Cheap recipes can get hard when days turn to weeks turn to months.  Many people get into a menu rut, rotating between the same recipes endlessly.  Sometimes old favorite recipes get forgotten as people eat the same things.  It’s all haphazard and kind of random.  Now that more people are more focused on other things like work, it’s not easy to plan and execute a healthy menu.

When coming up with that menu, and the recipes to fill it, keep in mind that prior planning prevents future problems.  When a menu is planned in advance the selection becomes more diverse.  Meal time is as much about the overall experience as it is about taste and nutrition.  Even the same old food can be an adventure if cooked a different way.

Ground beef is one example.  Ground beef and wheat with vegetables and tomato sauce (ketchup) is a burger  That’s a taco too.  People consider them quite different even though hamburgers and tacos share a lot of basic food elements in common.  A single food can result in a lot of different recipes.  Now for another one.  Chicken and potatoes.  It’s not very healthy to eat French fries and fried chicken.  Roasting both will save the waist line.  More riffs on the same basic song.  Many people eat chicken salad sandwiches with chips on the side.  Chicken pot pie is good too.  Chicken Teriyaki may not include potatoes, but it includes a starch in the white rice.  There is your many recipes from the same basic food elements.

Mixing meats can be fun too.  Delicious kebabs come from chicken and steak along with some vegetables.  Steak and lobster is fun for adults and kids.  Some people even like to fry a turkey and serve fish and chips as an early appetizer.  It’s all made in the same deep fryer.

What about sources for meal ideas?  Cooking shows are all over the television.  Those give great ideas, and most have web sites where more information, including cheap recipes, can be found.  A quick Google search on cheap ideas can give a lot of, well, ideas.  You’ll never have time to read all the resulting information.  There are more cheap recipes out there than the average person can ever eat in an entire lifetime.
